Churro Snacks
My collection of cereal snack mix recipes has grown significantly this year, and I am nothing short of thrilled about that. They’re easy to whip up and perfect for satisfying those cravings for some crunch. I like a savory mix as much as the next person, but I’ve been loving the dessert versions this season. For instance, these Churro Snacks! It was love at first bite with this easy mix, and once you taste it I’m sure you’ll feel the same
I’ve gone with Honeycomb cereal for this recipe. It has a subtly sweet flavor and plenty of surface area to coat in churro goodness. A simple sauce made with brown sugar, butter, and corn syrup comes together on the stovetop, then baking soda and vanilla are mixed in. At this step, the sauce will foam up and expand in size so be prepared!
INGREDIENTS
5 cups Honeycomb cereal
⅔ cup brown sugar
½ cup butter (1 stick)
⅓ cup corn syrup
1 teaspoon vanilla
¼ teaspoon baking soda
½ cup granulated sugar
1 ½ teaspoons cinnamon
PREPARATION
Preheat oven to 350 degrees F and line a baking sheet with parchment paper.
Pour cereal into a large bowl, then set aside.
In a medium-sized saucepan, add brown sugar, butter, and corn syrup. Stirring constantly, bring mixture to a boil then continue cooking for 1 more minute.
Remove pan from heat and stir in vanilla and baking soda. Mixture will bubble and expand.
Pour the mixture over the cereal and toss to evenly combine.
In a small bowl, sift together granulated sugar and cinnamon, then sprinkle over the cereal. Toss again until evenly coated.
Transfer cereal to the prepared baking sheet and bake for 8 minutes, stirring halfway through.
Allow cereal to cool then break into bite-sized pieces. Store in an airtight container.
