INGREDIENTS

For the Chicken Teriyaki:

2 chicken breasts, sliced into strips or bite-size pieces

Salt and pepper, to taste

1 tablespoon vegetable oil

1 tablespoon sesame oil (optional, for extra flavor)

For the Teriyaki Sauce:

1/4 cup soy sauce

1/4 cup water

2 tablespoons brown sugar (or more, to taste)

2 tablespoons honey (or more, to taste)

2 cloves garlic, minced

1 tablespoon fresh ginger, minced

1 tablespoon cornstarch (mixed with 1 tablespoon water to make a slurry)

For the Mixed Veggies:

1 red bell pepper, sliced

1 green bell pepper, sliced

1 medium carrot, julienned or sliced

1 small broccoli head, cut into florets

1/2 cup snap peas or snow peas

Garnish:

Sesame seeds

Sliced green onions

 

 

PREPARATION :

1. Prepare the Chicken:

Season the chicken pieces with salt and pepper.

Heat the vegetable oil and sesame oil (if using) in a large skillet or wok over medium-high heat.

Add the chicken and cook until browned and cooked through, about 6-8 minutes. Remove the chicken from the pan and set aside.

2. Make the Teriyaki Sauce:

In the same pan, add the soy sauce, water, brown sugar, honey, garlic, and ginger. Bring to a simmer over medium heat and stir until the sugar is dissolved.

Add the cornstarch slurry to the pan and stir continuously until the sauce thickens, about 2 minutes. Adjust sweetness by adding more honey or sugar if desired.

3. Cook the Veggies:

In the same pan or a separate pan, add a little more oil if needed and stir-fry the vegetables. Start with the carrots and broccoli as they take longer to cook, then add the bell peppers and snap peas. Cook until the vegetables are just tender but still crisp, about 3-4 minutes.

4. Combine Chicken and Veggies:

Return the cooked chicken to the pan with the vegetables. Pour the teriyaki sauce over the top and stir to combine everything. Cook for an additional 1-2 minutes to ensure everything is heated through and coated in the sauce.

5. Serve:

Serve the chicken teriyaki with mixed veggies hot. Garnish with sesame seeds and green onions.

Optionally, serve over steamed rice or noodles for a complete meal.

Vegetable Variations: Feel free to use any combination of vegetables you like. Other good options include mushrooms, onions, or zucchini.

Sauce Customization: Adjust the teriyaki sauce to your liking. Some prefer a sweeter sauce, while others might like it more garlicky or gingery.
