Zucchini Patties

INGREDIENTS:

2 medium zucchinis

1 teaspoon salt (for drawing water out of the zucchini)

1 large egg

1/2 cup all-purpose flour (or use breadcrumbs for a crunchier texture)

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

2 tablespoons fresh herbs (such as parsley, dill, or chives), finely chopped

Salt and pepper, to taste

1/4 cup olive oil (for frying)

Optional: 1/4 cup finely chopped onion or green onion for extra flavor

 

INSTRUCTIONS:

1. Prepare the Zucchini:

Grate the zucchinis using a coarse grater. Place the grated zucchini in a colander, sprinkle with 1 teaspoon of salt, and let it sit for about 10 minutes. The salt helps draw out moisture.

After 10 minutes, squeeze out as much water as possible from the zucchini. This step is crucial to prevent the patties from becoming soggy. You can use your hands, a clean kitchen towel, or cheesecloth.

2. Make the Patty Mixture:

In a large bowl, combine the drained zucchini, beaten egg, flour (or breadcrumbs), grated Parmesan, minced garlic, and fresh herbs. If you’re adding onion, mix it in now. Season with salt and pepper to taste. Stir until well combined.

3. Form the Patties:

Heat the olive oil in a large skillet over medium heat.

Meanwhile, form small patties from the zucchini mixture. If the mixture is too wet to hold its shape, you can add a little more flour or breadcrumbs to help bind it.

4. Fry the Patties:

Once the oil is hot, carefully place the patties in the skillet. Cook for about 3-4 minutes on each side, or until they are golden brown and crispy.

Work in batches to avoid overcrowding the skillet, which can lower the oil temperature and result in less crispy patties.

5. Serve:

Transfer the cooked zucchini patties to a plate lined with paper towels to drain any excess oil.

Serve hot, garnished with additional fresh herbs or a dollop of sour cream or yogurt on the side if desired.
