INGREDIENTS:

1.5 pounds sirloin steak, cut into 1-inch cubes

1.5 pounds baby potatoes, halved (or quartered if large)

2 tablespoons olive oil, divided

4 tablespoons unsalted butter, divided

5 cloves garlic, minced

1 teaspoon fresh thyme, chopped

1 teaspoon fresh rosemary, chopped

1 teaspoon fresh parsley, chopped

Optional: Red pepper flakes, for added heat

 

INSTRUCTIONS:

Step 1: Prepare the Potatoes

Boil the Potatoes: In a large pot of salted boiling water, cook the potatoes until just tender, about 8-10 minutes. Drain well.

Step 2: Cook the Steak

Season the Steak: Season the steak cubes generously with salt and pepper.

Brown the Steak: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
