INGREDIENTS:

For the Chicken:

1 pound chicken breast, thinly sliced

1 tablespoon soy sauce

1 tablespoon cornstarch

1/2 teaspoon black pepper

For the Stir Fry:

2 tablespoons vegetable oil

1 medium head of broccoli, cut into florets

2 large carrots, sliced diagonally

2 cloves garlic, minced

1 tablespoon fresh ginger, minced

For the Sauce:

3 tablespoons soy sauce

2 tablespoons oyster sauce

1 tablespoon hoisin sauce (optional for added sweetness and depth)

1 teaspoon sesame oil

1/2 cup chicken broth or water

1 teaspoon sugar

To Serve:

Sesame seeds (optional)

Green onions, chopped (optional)

Cooked rice or noodles

Equipment:

Large skillet or wok

Mixing bowls

Measuring spoons and cups

 

INSTRUCTIONS:

Marinate the Chicken:

In a bowl, mix the thinly sliced chicken breast with 1 tablespoon soy sauce, cornstarch, and black pepper. Let it marinate for at least 10 minutes while you prep the other ingredients.

Prepare the Sauce:

In a small bowl, whisk together 3 tablespoons soy sauce, oyster sauce, hoisin sauce if using, sesame oil, chicken broth, and sugar. Set aside.

Cook the Chicken:

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Add the marinated chicken and stir-fry until it is nearly cooked through and lightly browned, about 3-4 minutes.

Remove the chicken from the skillet and set aside.

Stir-Fry Vegetables:

In the same skillet, add another tablespoon of oil.

Add the minced garlic and ginger, stir-frying for about 30 seconds until fragrant.

Add the broccoli florets and carrot slices. Stir-fry for about 4-5 minutes until the vegetables are tender-crisp.

Combine Ingredients:

Return the chicken to the skillet.

Pour the sauce mixture over the chicken and vegetables.

Stir everything together and cook for an additional 2-3 minutes, allowing the sauce to thicken slightly and coat the ingredients evenly.

Final Touches and Serve:

Sprinkle with sesame seeds and chopped green onions if desired.

Serve the stir-fry hot over cooked rice or noodles.
