Egg and Sausage Muffins



1 tablespoon of butter


1/2 chopped onion


1/2 chopped bell pepper


1 chopped carrot


1/2 teaspoon of salt


3 chopped sausages


4 eggs


50 ml of milk (1/5 cup)


1/2 teaspoon pepper


Chopped parsley


50 g mozzarella cheese, grated.



1.In a pan, add the butter and onion, fry for a few minutes, then add the carrots, pepper, salt and black pepper.


In a bowl, mix the eggs with the milk, salt and pepper, then add the vegetable mixture and the parsley.


Put the chopped sausages into the muffin tin and fill with the egg mixture, sprinkle with grated mozzarella cheese.


Bake at 180°C (360°F) for 20 minutes
