Easy Crepes

1 cup (120g) all-purpose flour

1 1/2 cups (360ml) milk (whole or 2% work best)

2 large eggs

2 tablespoons (30g) unsalted butter, melted, plus more for cooking

1 tablespoon sugar (for sweet crepes; omit for savory)

1/4 teaspoon salt

Optional: 1 teaspoon vanilla extract (for sweet crepes)



1. Prepare the Batter:

In a blender, combine the flour, milk, eggs, melted butter, sugar (if making sweet crepes), salt, and vanilla extract (if using). Blend until the mixture is smooth and bubbles form on the surface, about 30 seconds to 1 minute.

Let the batter rest for at least 15 minutes at room temperature. This allows the flour to fully absorb the liquid and results in tender crepes.

2. Cook the Crepes:

Heat a non-stick skillet or crepe pan over medium heat. Lightly butter the pan.

For each crepe, pour about 1/4 cup of batter into the center of the pan. Tilt and swirl the pan immediately to spread the batter thinly across the bottom.

Cook until the edges of the crepe look dry and start to lift from the pan, about 1 to 2 minutes. Use a spatula to gently flip the crepe and cook for another 30 seconds to 1 minute on the second side, or until lightly golden.

Transfer the cooked crepe to a plate. Repeat with the remaining batter, buttering the pan as needed between crepes.

3. Serve:

Serve the crepes warm. For sweet crepes, fill them with jam, fresh fruit, Nutella, lemon and sugar, whipped cream, or yogurt. For savory versions, try fillings like sautéed vegetables, cheese, ham, or eggs.

To serve, fold the crepes into quarters or roll them up with your filling of choice.
